Cowboy Candy Burgers
The one that converts people. Sweet heat against melted cheese.
Method
- Divide the mince into four and shape into patties slightly wider than the buns — they shrink as they cook. Season generously on both sides.
- Get a heavy pan or grill properly hot. Cook the patties for four to five minutes a side without pressing them.
- Lay a slice of cheddar on each patty for the last minute and cover the pan so it melts.
- Toast the cut sides of the buns in the same pan.
- Spread the bases with mayonnaise, add lettuce and tomato, then the patty.
- Spoon a tablespoon of Cowboy Candy over the cheese and close the burger.
Cook's notes
Season the outside of the patty, not the mix. Salt worked into raw mince makes the texture springy.
Keeping it
Cooked patties keep a day in the fridge. Assemble fresh.
